
Classic okroshka
Description
A hearty first course. The best first dish on a hot summer afternoon is cold okroshka. This legendary dish consists of raw and boiled vegetables, boiled meat or sausage, eggs, herbs, combined with kvass, kefir, buttermilk, or sour cream. I'll explain and show you. Serve it in bowls and enjoy.

Step 1

To prepare classic okroshka, we need to take sausage. Boiled sausage, such as doctor's sausage, should be cut into small cubes. For a healthier version of okroshka, you can use boiled chicken breast.

The fresh cucumber should be washed and dried. After cutting off the ends, dice the cucumbers into small cubes. Towards the end of summer, cucumbers have a tougher skin and can sometimes be bitter. For such cucumbers, the skin should be removed beforehand.

Boiled chicken eggs should be cooled, peeled, and cut into cubes.

Finely chop the fresh herbs. In my refrigerator, I only had fresh green onions.

Peel the boiled potatoes and cut them into cubes. Place the potatoes, cucumbers, sausage, eggs, and greens into a container.

Pour the whey into the pot. If you can't find whey, you can use boiled water or 1% kefir instead.

Add sour cream to the okroshka. Season the okroshka with salt and pepper to taste. Mix well until the sour cream dissolves in the whey.
