The recipe won't take much time. How can you resist enjoying homemade okroshka on a hot day? With buttermilk, kvass, or kefir—the choice is yours. Okroshka is considered a hallmark of Russian cuisine, and there are numerous ways to prepare it. This cold soup has been made since the 18th century and remains a staple dish during hot weather. Serve the soup hot.

    1. In our family, we only like okroshka made with kvass. Many people replace it with mineral water, kefir, or buttermilk. It's a matter of taste, as they say. Kvass season has arrived for us, so we decided to make a cold soup — okroshka. First, boil potatoes in their skins and eggs. Meanwhile, prepare the remaining ingredients.

    2. Slice the sausage into rings, then into strips and cubes. It is better to cut it into small cubes.

    3. Do the same with potatoes, eggs, cucumbers, and radishes.

    4. Dill and green onion are perfect herbs. Finely chop and add to the other ingredients.

    6. Many people like to dress up okroshka in a pot, while others prefer doing it in a bowl. I belong to the second group and prefer seasoning okroshka in individual portions. Add salt, mayonnaise, and kvass, then mix everything until smooth.
