
Cucumbers in oil
Description
For preparing cucumbers in oil marinade, you don't necessarily have to use rice vinegar—it can be replaced with regular 9% or 7% apple cider vinegar. The cucumbers themselves should be fresh and crisp. The key is to properly crush them so they can absorb the marinade. See the recipe below.

Prepare all the necessary ingredients.

The cucumbers need to be washed, cut in half, and their flesh scooped out with a spoon.

Using the handle of a knife or a kitchen mallet, lightly crush the cucumbers until they crack.

Cut the flattened cucumbers in half and then into medium pieces, pour vinegar over them, and let marinate for about 15 minutes. Then squeeze the cucumbers to remove the excess juice and transfer them to a salad bowl. Add chopped chili pepper, sesame oil, sugar, soy sauce, and minced garlic to the cucumbers.
