
Very simple pea soup
Description
Hearty and aromatic soup. We prepare the soup without meat; it will be rich and flavorful thanks to the peas. Garnish the finished soup with sour cream or fresh herbs, as well as croutons, which are more familiar to us. Serve hot. This soup is delicious—if you're unsure, make a small portion first. Use regular dried peas, either red or green, whole or split. Serve with fresh herbs and sour cream.

1. Transfer the peas to the pot in which you will cook the soup.

2. Pour hot water (about 2 liters) into the saucepan.

3. Place the pot over heat, simmer the peas over low heat for 40 minutes, periodically removing the foam.

4. Wash and peel the carrots and potatoes. Grate the carrots on a fine grater and cut the potatoes into small pieces.

5. After 40 minutes, add the potatoes and cook for another 15 minutes.

6. Peel the onion and slice it into strips.

7. Heat a pan with olive oil, add the onion to the pan and sauté until golden brown.

8. Place the fried onion into the pot with the soup.

9. Then add the carrots, mix everything thoroughly and cook for another 5 minutes, season with salt and pepper.

10. Wash the parsley and chop coarsely, garnish the soup with parsley and sour cream, and serve.
