Description
The soup is simple and quick to prepare. Its ingredients differ from our traditional first courses, but the aromas of Italian spices are simply intoxicating, and you'll definitely make it again and again. In a large heavy-bottomed pot, heat 1 tablespoon of olive oil and add the chicken fillet and carrots. Sauté, stirring constantly, until golden brown, about 3-4 minutes.

Add garlic and cook for another minute.

Pour in the broth and add marjoram. Bring to a boil over high heat.

Reduce the heat and cook the chicken until done, about 5 minutes. Then remove the fillet with a slotted spoon and, on a clean cutting board, shred it into pieces.

Add beans and spinach to the broth. Bring to a boil and cook for another 5 minutes.

Using a blender or food processor, mix the remaining olive oil, Parmesan, and basil with a little broth.
