
Creamy broccoli cheese soup
Description
A hearty first course. This creamy, tender soup will warm you up during the cold season. You can use soft Cheddar, Monterey Jack, or goat cheese. Serve the soup hot.

Step 1

1. Dice the onion. Separate the broccoli into florets. Melt the butter in a saucepan over medium heat, then add the onion. Sauté the onion for 3-4 minutes, then sprinkle flour over the top. Stir and cook for 1 minute, then pour in the milk and milk mixed half-and-half with cream.

2. Add nutmeg, then add broccoli, a small pinch of salt, and a generous amount of ground black pepper.

3. Cover with a lid and reduce heat to low. Simmer gently for 20-30 minutes, until the broccoli is cooked. Stir in the grated cheese and let it melt. Add seasonings to taste, if needed.

4. Then either serve the soup as is, or mash the soup with a pestle to break down the broccoli, or transfer the soup to a blender and blend until smooth.

5. If you are making the purée in a blender, transfer it to a saucepan and heat gently. Add milk or chicken broth as needed to thin the soup.

6. If desired, you can serve the soup in bread bowls by cutting off the top and removing the bread crumb.
