
Hearty soup with meatballs and vegetables
Description
Hearty and aromatic soup. The cooking time I indicated does not include the preparation of meat broth, which can be made in advance and stored in the refrigerator. The broth can be not only pork, but also chicken or beef—choose according to your taste. Instead of noodles, you can add linguine or farfalle to the soup. See the recipe for detailed instructions. Serve with fresh herbs and sour cream.

Prepare the ingredients for the soup. Peel the vegetables and rinse them. Bring the meat broth to a boil.

Grind a piece of pork through a meat grinder, add half of finely chopped onion, herbs, salt, and ground black pepper. Mix well.

With wet hands, shape the minced meat into meatballs. Peel the potatoes and cut them into small pieces.

Place the meatballs and potatoes into the broth. Cook for 20 minutes.

Chop the onion, carrot, and bell pepper. Sauté in two tablespoons of oil. Season with salt to taste.

When the vegetables are almost ready, add tomato paste and tomatoes in their own juice, previously removing their skin (if any).

Add the fried vegetables and beans (be sure to drain the liquid, it is not needed).

Add the noodles and cook the soup for 10 minutes.
