
Real soup
Description
Hearty and aromatic soup. The ingredient list for this soup is quite extensive, and the preparation takes a lot of time, but it's definitely worth it. Harcho is nutritious, fragrant, and amazingly delicious. The soup turns out thick and spicy, with a pronounced pepper aroma. Don't be surprised by the addition of nuts—Georgians add nuts to almost all their dishes. The soup is ready to serve.

Step 1
Wash the meat thoroughly and dry well. Cut into small strips. Season with salt, pepper, and hot paprika. Coat the meat in flour. Heat a little olive oil in a small frying pan and fry the meat.

Meanwhile, finely chop the onion and garlic. Sauté the onion together with the garlic until golden brown. Cut the bell pepper into strips.

In a large pot, bring water to a boil. Add meat and onion. Stir in tomato sauce, ajvar, dried herbs, and spices. Finely chop the nuts and add them to the soup as well.

Simmer over low heat for about 1.5 hours. Then add rice and bell pepper. Cook for another 20–30 minutes. At the end, add a large amount of finely chopped fresh herbs.
