
Meat soup with dried apricots
Description
The recipe won't take much time. This idea led me to share this dish from Armenian cuisine called "Bozbash." I want to tell you about it. Serve the soup hot.

Rinse the chickpeas, then soak them in water for 8-10 hours.

Rinse the meat and cut it into medium pieces. Boil it in water for 1.5 hours.

Set the broth aside. Remove the meat from the pot. Sauté finely chopped onion in oil, then add the meat and flour. Fry until golden brown.

Put the chickpeas to cook in the prepared broth.

Add the peeled and sliced potatoes to the broth.

After 10 minutes, add the chopped apricots and prunes.

Next, add the fried meat with onions and quince, cut into pieces, to the soup.

Blanch the tomatoes. Peel them, then chop the flesh. Add it to the soup.

Then coarsely chop the apple. Add it to the saucepan.

Add salt and all the chopped greens to the soup 10 minutes before it's done.

And at the very end, pour lemon juice into the soup. It's ready!
