Description

The soup is simple and quick to prepare. Today we'll be making a rich and aromatic pork broth. You can similarly prepare broth using any other bone-in meat, but keep in mind that cooking time, as well as the taste and calorie content of the dish, will change. For example, turkey or chicken requires less cooking time than pork, while beef will need longer. The best pork for broth is with a thin layer of fat—always choose a cut with bone to achieve a rich and hearty broth. Ideally, the meat should be fresh, but if that's not possible, you can use frozen meat. The main condition is that it must be properly defrosted at room temperature. If you've never made meat broth from scratch before, be sure to pay attention to this recipe.

    Prepare all the ingredients from the list. Peel and rinse the carrots and garlic. Remove only the outer layers of skin from the onion, leaving the inner layers intact, wash thoroughly, and cut off any parts you deem unnecessary. I usually trim the tips slightly. Rinse the meat and pat dry with paper towels.

    Place the meat in a pot and pour cold water over it. Why cold water instead of boiling water? The point is that during slow heating, the meat will release extractive substances that will enrich the broth. Also, do not cut the meat—it should slowly release its juices.

    Add onion, garlic, and coarsely chopped (not finely!) carrots to the pot.

    Add bay leaf and peppercorns. Also add parsley or any other herbs to taste. For convenience, tie the herbs into a tight bundle with a string so that it will be easier to remove later.

    Bring the broth to a boil, skim off the foam, reduce the heat to the lowest setting, and simmer the broth for 1 to 1.5 hours (until the meat is cooked through). Add salt 15 minutes before the end of cooking!

    Strain the prepared meat broth through a sieve or cheesecloth. Remove the meat from the bones. You can return the meat back to the broth or serve it separately on a plate.
