
Meat solyanka with mushrooms and beans
Description
Hearty and aromatic soup. Meat solyanka is a delicious and filling soup that can also be served at a festive table. Beans and mushrooms add their own rich flavor to the dish, playing an important role in this wonderful soup. With them, solyanka becomes even thicker, richer, and more satisfying. By the way, you can cook it in water, but I used chicken broth. If you prepare solyanka for lunch on a weekday, you won't need a second course—just go straight to dessert.

Take all the ingredients for preparing solyanka.

Pour cold water over the beans in advance and let them soak for several hours, or preferably overnight. Then transfer to chicken broth and cook until the beans are tender.

Meanwhile, finely chop the onion. Grate the cucumber on a grater or also finely chop it. Add to the frying pan.

Add tomato paste. Pour in sunflower oil and 100 ml of chicken broth or water. Mix, cover with a lid, and simmer over medium heat for 10–12 minutes.

Then add the sliced mushrooms.

Cover again with a lid and simmer the onion with the pickle, tomato paste, and mushrooms for another 6-7 minutes.

Place the prepared mixture of vegetables and mushrooms into the pot with the beans.

Slice the sausages, chicken ham, and pork leg.

Place the sliced sausages into the pot.

Add salt, pepper, and bay leaf.

Simmer the solyanka for 10 minutes. Add olives to the finished soup.

Serve the solyanka with a slice of lemon in the bowl. You can also add sour cream, but that's optional.
