
Carrot salad with nuts and parsley

A simple dish to prepare. You can take this carrot salad to work, on a picnic, or during a trip. It stores well in the refrigerator for about 2 days, and its flavor actually improves over time! Dress the salad with apple cider vinegar—it perfectly enhances the taste of the carrots. Serve chilled.

Prepare the listed ingredients. Peel the carrots and rinse them under water. Wash the parsley as well and shake off excess moisture from the greens.

Grate the washed carrot on a coarse grater into a deep container. You can also use a Korean-style carrot grater.

Chop the parsley and add it to the carrot slices in a container.

Crush the walnut kernels by hand and add them to the other ingredients. If desired, you can first toast the kernels, let them cool, and then crush them—they will develop a more pronounced flavor.
