
Manchiza
Description
Hearty and aromatic soup. So, I'm sharing the recipe. Ladle into bowls and serve.

To prepare manchiza, take potatoes, beef, carrots, onions, tomatoes, flour, egg, salt, and spices.

Cut the beef into thin strips, as for preparing beef stroganoff. Heat a saucepan or a wok. Pour in the vegetable oil. Add the meat and sear on all sides. Do not stir the meat for the first 10 minutes.

Slice the onion into half-rings. Add to the meat and fry together.

Finely chop and add the carrots.

Cut the tomatoes into pieces and add them to the meat. The tomatoes should be cut into bite-sized pieces for easy eating in the finished dish; the exact shape of the cuts does not matter.

Peel the potatoes and cut them into cubes. Add to the meat and mix. Pour in 2 liters of water.

Place the flour in a bowl. Add the egg and a little salt. Knead a firm dough. Add water to the dough as much as needed for it to come together into a ball and become dense. You can dust the table and your hands with flour to make it easier to work with.

Roll out the dough into a very thin sheet. Next, we need to cut the dough.

Cut into small triangles. You can also cut into noodles. The pieces of dough don't need to be perfectly uniform, but make them small.

When the potatoes are cooked, drop the cut dough into the boiling broth. Cook for 3 minutes. Check for salt. Add Eastern spices to taste. I only use ground black pepper and khmeli-suneli.
