Onion soup
Description
Looking at the list of ingredients for this soup, you might think there are too few of them, and the soup won't be flavorful or rich enough. But I'm eager to assure you: this soup turns out very tasty, primarily because several types of onions are used, complementing each other perfectly. Moreover, the onions are first sautéed and then simmered, resulting in a rich and vibrant flavor. If you enjoy grain-based soups or pureed soups, be sure to try my recipe. The soup is ready to serve.
Instructions
- 1
Step 1

Prepare all the necessary ingredients. Peel and rinse the onion.
- 2
Step 2

Slice the leek into thin rounds, and cut the onion into quarter-rings (or smaller).
- 3
Step 3

Sauté both types of onion in vegetable or butter until they turn slightly golden. Optionally, you can also add some garlic or garlic powder.
- 4
Step 4

Place the fried onion in a saucepan, add salt.
- 5
Step 5

Pour broth or water over everything and cook until the onions are soft (I cooked for about 30 minutes; by then the onions became very soft and the liquid reduced significantly).
- 6
Step 6

Then add the processed cheese, mix well, and remove the pot from the heat.
- 7
Step 7

The soup is ready. You can eat it as is, or blend it with a blender.
- 8
Step 8

That's exactly what I did. This creamy soup is very much loved by me and my family.
- 9
Step 9

When serving, place a pinch of finely grated hard cheese into each plate; it will melt and form a beautiful crust on the surface.
- 10
Step 10

The soup is ready. Serve hot.
