
Classic onion soup
Description
A hearty first course. Many years ago, this classic onion soup was considered a dish for the poor, but soon the wealthy refined it with port wine, turning it into a delicacy. It's very quick to prepare and served with garlic croutons on the side. Ladle into bowls and serve.

1. Onion soup is quite easy to prepare. Its unusual and sophisticated flavor comes from port wine and garlic croutons. Slice the onions, some of which we will sauté, while the rest we will leave raw.

2. Fry the onion in vegetable oil until golden brown.

3. In advance, we need to cook chicken broth. Add fried onion and part of the remaining raw onion to it. Also add raw carrots and bring everything to a boil.

4. After boiling for about 5 minutes, remove from heat. Blend everything with a blender.

5. Pour port wine into another saucepan, add a couple of bay leaves. Bring to a boil. Boil for a couple of minutes, then add our soup puree to this pot. Bring to a boil again, then remove from heat.

6. Serve in portions, together with garlic croutons, which can be made at home or purchased ready-made.
