
French onion soup

Peel the onion and chop it coarsely (you can cut it into rings or half-rings). Pour melted butter into a heated saucepan, then add the onion. Fry over low heat for 15 minutes, until the onion becomes soft. Add salt and sugar, mix thoroughly, and continue cooking until the onion takes on a caramel hue.

After 15-20 minutes, add wine to the onions and simmer over high heat for 10 minutes, until all the liquid has evaporated.

Add the beef broth, thyme, and bay leaf, cover with a lid, and bring to a boil. Simmer for 30 minutes. When the soup is ready, add the remaining butter, as well as salt and pepper to taste, and mix thoroughly.

Meanwhile, slice two pieces of baguette 0.5 inches thick. Toast them in a pan without oil, then rub the toasts with garlic.

Next, we will need a heat-resistant dish. Add half a teaspoon of sherry to the bottom of the dish. On top of the wine, add a ladle of soup, then sprinkle with cheese. Cover the dish with croutons, sprinkle the remaining grated cheese on top, and bake in the oven for 5–7 minutes. The dish is ready.
