Step 1

First, we'll cook beef broth. Place the beef in a pot, add peeled carrots, leek, celery root, and parsley root. Simmer until the meat is cooked. Then remove the meat from the bone. The vegetables can be discarded, or you can chop them into pieces and add to the solyanka.

And prepare all the other ingredients. If you decided to discard the vegetables from the broth, additionally peel and chop one carrot and a piece of celery root.

Cut the pork into small pieces and fry until lightly browned. Transfer to a pot, pour in beef broth, and cook until tender. Add raw carrots and celery (if using) to the pot and cook together with the meat.

We'll sauté finely chopped bacon and sausage, add finely chopped onion, and fry until the onion becomes translucent. Transfer to a pot with already cooked pork. Add beef cut into pieces as well.

Simmer the sliced marinated cucumbers for about 10 minutes with a small amount of broth, then add minced garlic and tomato paste. Cook for another 2–3 minutes and transfer everything to the pot. If you decided to add vegetables from the broth—now is the time.

When the solyanka has simmered for about 5 minutes, add broth and cucumber brine to achieve your desired consistency, then season with salt and black pepper to taste.

Olives and fresh herbs can be added to the pot, or directly to the plates when serving.

Add a slice of lemon to each plate and serve sour cream separately.
