
Lemon salad with arugula
Description
The recipe won't take much time. Lately, I've been adding too many high-fat, high-calorie dishes—now it's time to prepare something light and diet-friendly! My favorite diet salad is lemon arugula salad. The salad takes literally 5–10 minutes to prepare, requires few ingredients, and is low in calories, yet packed with vitamins and good vibes—a truckload and a little cartful! :) Serve at the table.

Lightly toast the almond flakes in a dry skillet.

Rinse the arugula leaves thoroughly and let them dry.

Place arugula in a salad bowl, lightly drizzle with olive oil.

Squeeze a little lemon juice over the arugula (I use no more than 2-3 tablespoons, because I don't like a very sharp lemon dressing—I prefer just a slight hint of lemon flavor on the fresh arugula).

Salt.

Mix.

Add raisins to the arugula.
