
Summer soup on kefir
Description
The recipe won't take much time. You can prepare this soup using your favorite fermented dairy product—ayran, tan, or matsoni work perfectly. If the soup turns out too thick for your taste, add a few ice cubes to each serving, or dilute the soup with boiled water to your desired consistency. Serve with fresh herbs and sour cream.

Prepare all the ingredients. Wash and dry the green onion, cucumber, dill, and parsley.

Prepare a deep large bowl, place finely chopped green onions and garlic in it, and cut the cucumber into small cubes.

Chop the dill and parsley, add to the bowl with the vegetables, season with salt and pepper to taste, and squeeze in the lemon juice.

Pour medium-fat kefir into a bowl.
