
Liège salad with string beans
Description
A simple dish to prepare. This hearty salad is a great option to warm you up on cool days and keep you full for hours. There's no need to prepare the dish in advance, although you can boil the beans and potatoes ahead of time—just store the ingredients in the refrigerator. Serve chilled.

Step 1

Prepare the listed ingredients. You can use raw, salted, or smoked bacon.

Rinse the green beans in water, trim the ends, and cut into 2-3 cm pieces. Transfer the chopped beans to a frying pan, add a pinch of salt and 1/4 tsp of lemon juice. Pour in 100 ml of water and simmer for about 5-6 minutes.

Meanwhile, wash the potatoes in water, prick them several times with a knife, place them in a bag, and tie it closed. Microwave the potatoes for about 5-8 minutes, or until cooked through. Pricking is essential, otherwise they may explode. Alternatively, you can use pre-cooked or baked potatoes left over from lunch or dinner.

Fry the bacon in a pan without adding oil for 1-2 minutes on each side until golden brown.

Place the bacon on a cutting board and peel the potatoes. Cut them into large slices and fry in the fat left over from cooking the bacon. Transfer the beans and potatoes to a deep container and let cool for 5–10 minutes.

In a separate bowl or sauce dish, mix the whole grain mustard, lemon juice, salt, and ground black pepper with vegetable oil. This is the salad dressing!

Cut the fried bacon into portion pieces, add to the container with the dressing. Gently mix everything.

Rinse the fresh herbs and salad mix, then shake off excess moisture. Place the greens on a plate and top with the prepared salad. Serve warm.
