
Light chicken soup
Description
The soup is simple and quick to prepare. Chicken soup is not only light, but also very healthy and nutritious. This soup is especially helpful when you have a cold or if you can't eat anything heavy, fried, or fatty. To make a light chicken soup, use chicken breast (or fillet), a couple of potatoes, onion, and carrot. Serve hot in bowls.

Cut up the chicken for the soup, remove the skin and trim off excess fat. Put the chicken in water to cook: let it boil for 10 minutes, then drain the first broth. Place it back into fresh water to cook again and let it boil for another 10 minutes.

Meanwhile, cut the potatoes into cubes. Remove the chicken from the broth after the second boiling, and add the potatoes to the broth.

Also add finely chopped onion and grated carrot to the soup. You can sauté them, but I prefer to add them raw.

If the potatoes are almost done, add the pasta—it usually takes about 5–7 minutes to cook. I had small star-shaped ones, but spaghetti or shells would work just as well.

Cut the boiled chicken into small pieces. Be sure to season the soup with salt and pepper. If the pasta is cooked and the potatoes are ready, add the chicken to the soup, cover with a lid, and turn off the heat.

Let the ready chicken soup sit for 5-10 minutes, then serve. You can garnish the soup with fresh herbs before serving.
