
Light chicken broth with carrots and onions
Description
You can add some frozen peas to this broth 5 minutes before the end of cooking. For a richer flavor, you may also add parsley root and celery root. A half of a boiled chicken egg goes perfectly with this broth. This is a light yet satisfying soup suitable for both adults and young children.

Prepare all the necessary ingredients. For the broth, you can use any parts of the chicken.

Rinse the chicken thoroughly, place it in a pot, cover with cold water, and put on the stove. Bring to a boil and skim off the foam. If desired, for a leaner version, you can remove the skin from the chicken.

I don't like boiled onion in broth, so I just peel the onion and put it in whole. You can chop it finely if you prefer. Peel the carrot, cut it into pieces, and add it to the broth.

Add peppercorns, salt, bay leaf, and tied stems of parsley for aroma and flavor to the broth. Simmer the chicken broth for 20-30 minutes.

After some time, season the broth if necessary. Remove the onion, bay leaf, and parsley stems, as we no longer need them.
