Description
The recipe won't take much time. Colorful and tasty "Lazzat" salad is a great dish made from seasonal vegetables that you can prepare every day if you're not afraid of gaining weight. Eggplants absorb vegetable oil when fried, making the dish high in calories! Instead of parsley, you can add cilantro. Serve at the table.

Prepare the listed ingredients.

Wash the eggplant in water, cut off the stems, and cut into medium cubes. Add 2 pinches of salt.

Immediately add the cornstarch and mix all the contents of the container.

Heat a skillet with vegetable oil and add the eggplant slices. Be sure to place them only in hot oil so the coating starts frying immediately. Reduce the heat to medium and fry for about 3–4 minutes, stirring occasionally.

Wash the tomatoes in water, remove the green cores, and slice the vegetables into thick pieces, placing them in a deep container.

Wash the parsley, chop it finely, and add it to the container with the tomatoes.

Place the fried eggplants and salt, mix everything.
