Chicken noodle soup

Description

Perfect for lunch. Homemade noodles are easy to make: just flour and eggs. Remember the ratio: one egg per 100 grams of flour. This yields quite a lot of noodles, enough for a large pot! The noodle dough is difficult to knead, as it's stiff, and you'll need to apply considerable effort when rolling it out. To prepare noodle soup with chicken broth, cook a chicken broth (you can use chicken fillet, though it will make the broth very light and diet-friendly), and optionally add potatoes and carrots to make a richer, heartier soup.

    Rinse the chicken thighs, place them in a saucepan, and start boiling. Cook over medium heat, periodically skimming off the film to keep the broth clear.

    While the chicken is boiling, prepare the noodles. Sift the flour, add the egg. Knead a firm dough.

    You'll need to knead the dough for a long time; if necessary, grease your hands with vegetable oil. The noodle dough should end up elastic and smooth. Wrap it in plastic wrap and let it rest for about 15–20 minutes.

    While the dough is resting, return to the broth. Prepare the vegetables: peel the potatoes, carrots, and onion. Cut the potatoes into cubes, the carrots into slices, and the onion into small cubes. Finely chop the herbs as well.

    Roll out the rested dough. This is quite difficult, but roll it as thin as possible.

    When you roll out the dough to less than half a centimeter, let it dry for about 10 minutes.

    Meanwhile, return to the broth: add the vegetables to the soup, season with salt, cover with a lid, and continue cooking over medium heat.

    Roll the dried sheet into a loose roll, not too tightly, so the dough doesn't stick together again.

    Cut it into thin strips about 3-4 mm wide.

    Carefully separate the noodles by hand, preferably one by one, so that they are easier to add to the broth later.

    Drop the noodles into the soup, stirring well to prevent them from sticking together. Add the spices, herbs, and bay leaf. Cook the broth with the noodles for 2-3 minutes; do not overcook the noodles.

    Let the finished noodle soup in chicken broth sit covered for a few more minutes after turning off the heat.
