
Chicken noodle soup with mushrooms and thyme
Description
The soup is simple and quick to prepare. Don't be afraid to make homemade noodles, as it's not difficult at all. The simple dough is easy to knead and cut into thin strips of desired width. Cooking the noodles is even easier—it takes only about 3-4 minutes. You can season the prepared soup with spicy spices, but don't overdo it, as too much will overpower the aroma of the white mushrooms. Good luck! Serve the soup hot.

Prepare the necessary ingredients.

Wash the vegetables, peel and cut into large pieces. Transfer the vegetables to a deep pot, add chicken thighs and drumsticks. Pour in water and bring to a boil. Add salt, bay leaf, pepper, and thyme. Continue simmering the broth over low heat for 1.5 hours. After that time, remove all the vegetables and chicken. Strain the broth, then return the meat pieces to it (make sure to carefully pick through them).

Sift the flour into a bowl, make a depression in the center, and crack an egg with two yolks into it. Add a pinch of salt and pour in 1/3 cup of water. Knead the dough.

Roll out the prepared dough into a flatbread.

Cut the flatbread into noodles with a sharp knife.

Rinse the white mushrooms and slice them into strips. Quickly fry the mushrooms in a pan with finely chopped carrots. Meanwhile, chop the herbs.

Transfer the sautéed mixture to a pot with broth. Simmer over low heat for another 15 minutes. Meanwhile, in a separate pot, cook the noodles in salted water (about 3-4 minutes). Pour the broth into bowls, add cooked noodles to each, and garnish with parsley.
