
Homemade noodles in chicken broth

1. Prepare the broth: place the poultry (in this case, half a quail carcass and one chicken leg) into cold water, bring to a boil, skim off the foam, then season with salt and spices to taste. Cook until the meat is tender (about 30 minutes).

2. When the meat is ready, remove it to a plate, and in the meantime add diced potatoes to the broth. The noodles are cooked without adding potatoes (in some variations), but our family prefers it better with them.

3. Homemade noodles are quick to prepare: mix flour with an egg (use as much flour as needed), add salt, and knead a firm dough. Then roll it out into a sheet, roll it up, and slice thinly. If you have pasta-making equipment, your noodles will be truly outstanding.

4. Chop the onion and carrot and sauté them in vegetable or butter (whichever you prefer). When the potatoes start boiling, add the sautéed vegetables to the broth.

5. For greens, I add dill and green onion. Add the noodles to the broth when the potatoes are almost ready.

6. Bring to a boil, cook for another couple of minutes, then remove from heat. It's better not to overcook the noodles, but rather leave them slightly firm (they will continue cooking as they cool down).
