Description

The soup is simple and quick to prepare. In Asian countries, noodles are available everywhere, but they are harder to find here. For making classic "Lagman," noodles are always prepared at home. Unlike the European version, these are rolled into a coil and placed on a plate, then coated with oil. For the dish, noodles are boiled separately, then poured with broth and combined with the remaining ingredients. Serve with fresh herbs and sour cream.

    Put unbleached flour into a bowl, then add salt and mix.

    Make a depression in the center and pour in 50 milliliters of water, mix, then gradually add water one tablespoon at a time to knead the dough.

    Knead the dough, wet your hands with water and continue kneading the dough for 5 minutes. If it is too stiff, add a little more water.

    Brush the dough with vegetable oil, cover it with plastic wrap, then cover with a towel and let it rest for half an hour.

    After 30 minutes, remove the film with the towel and cut the dough into several pieces. Roll each piece into thin sausages and brush with vegetable oil.

    Roll each sausage by hand into a thin round strip, then arrange the noodles in a snail shape on a plate. Start from the center and brush with olive oil, let stand for half an hour.

    Take out the strips and place them on a cutting board, rolling them even thinner. Then, put the noodles over your hands and stretch them like yarn.

    Place the noodles into boiling salted water, stir with a stick, cover the pot with a lid, and cook for a few minutes. Then, uncover and cook for another 3 minutes.
