Uyghur-style Laghman

Description

The recipe won't take much time. Lagman consists of long noodles and sauce. There are many variations of lagman. For traditional lagman, flat or hand-pulled long noodles are used. You can buy ready-made spaghetti or make the noodles yourself. This recipe suggests using ready-made noodles. Serve the soup hot.

    1. Wash the meat and cut into small pieces. Cut eggplants and peppers into cubes. Thinly shred the cabbage. Peel and slice the onion into half-rings. Cut tomatoes into small pieces. Finely chop the garlic.

    2. Heat vegetable oil in a cauldron and add the meat. Sear until golden brown. Add onion and garlic, sauté briefly. Add tomatoes and the remaining vegetables. Season with salt and pepper to taste. Sauté all the vegetables, then pour in broth or water. Once the sauce comes to a boil, reduce the heat and simmer for 30–40 minutes. Cook the noodles separately. Rinse the cooked noodles under cold water. Just before serving, pour boiling water over the noodles, then divide them among deep plates. Pour the sauce over the top. Sprinkle with chopped herbs and add vinegar to taste.
