
Uzbek-style beef lagman
Description
The recipe won't take much time. We're preparing Uzbek-style beef lagman at home. This time, I didn't make the lagman noodles by hand but bought them from the store. The soup was cooked in a kazan, which is much more authentic according to Uzbek cuisine. Before serving, let the soup rest, covered, for 10–15 minutes. Good luck! The soup is ready to serve.

Step 1

Bring 2.5 liters of water to a boil. Cook the noodles in salted boiling water for 3-4 minutes. Drain in a colander and let the water drain off. Toss the noodles with vegetable oil.

Cut the meat into large cubes. Heat vegetable oil in a cauldron and fry the beef until a golden crust forms, for 10-15 minutes.

Finely chop the onion.

Wash and peel the radish. Cut into julienne strips.

Add radish and onion to the meat.

Add tomato paste, mix well, and continue cooking for 10-15 minutes.

Pour in water or broth to cover.

Simmer under a lid over low heat until done, about 45-60 minutes.

Chop the herbs and garlic.

At the very end, add to the pot: herbs, garlic, and pepper.

Add the noodles to the soup just before serving and heat slightly.
