
Chicken soup with parsnip
Description
The soup is simple and quick to prepare. Tie the parsley stems together with kitchen twine. Place chopped parsley, peppercorns, bay leaf, thyme, and garlic into a piece of cheesecloth. Put the parsley stems, spice bundle, carrots, parsnip, onion, and chicken into a large pot. Add enough water to cover the ingredients and season with salt. Bring to a boil over high heat, then reduce the heat, cover, and simmer until the chicken is cooked through, about 45 minutes. Skim off any foam that rises to the surface. Remove the chicken from the pot. Discard the parsley stems and the spice bundle. Remove the skin and bones from the chicken. Chop the meat into small pieces and return it to the soup. Reheat and adjust the seasoning with salt. Serve the soup garnished with fresh parsley, accompanied by fresh herbs and sour cream.
