
Chicken soup with oyster mushrooms

I highly recommend you try this recipe for chicken soup with oyster mushrooms, as my family was absolutely delighted with this culinary experiment :) The taste is amazing, it's inexpensive, and doesn't take much time—what's not to love? ;) 1. Let's start with preparation: place the oyster mushrooms to thaw at room temperature, grate the onion and carrot, and cut the potatoes into small cubes. 2. You can either chop the chicken drumsticks into pieces or place them whole into a pot of water and set it on the stove (the latter is easier, but the soup will look more appealing if the chicken is cut into chunks :)). Once the water boils, reduce the heat and simmer for another 10–15 minutes. 3. Don't waste these precious minutes—heat a skillet with vegetable oil and sauté the onion and carrot until golden. Then add the mushrooms, stir, and fry for about three minutes to enhance the aroma of our simple chicken and oyster mushroom soup. 4. Now it's time to add this sautéed mixture to the soup! Season with salt, pepper, and spices to taste. Stir well and continue cooking until everything is done.
