
Chicken soup with dumplings
Description
This delicate soup with dumplings is prepared quite quickly and has a spicy aroma thanks to the spices. Ladle into bowls and serve.

1. Cut the chicken into pieces. Finely chop the carrots, celery, and onion. Season the chicken pieces with salt and pepper, then coat them on both sides with flour.

2. Melt the butter in a saucepan over medium heat. Sear the chicken until browned on both sides, then transfer to a clean plate.

3. Add the chopped onion, carrot, and celery to the same pot. Stir and sauté for 3-4 minutes over low heat.

4. Add thyme and turmeric, then pour in the chicken broth and apple cider. Stir, then add the sautéed chicken pieces. Cover with a lid and simmer for 20 minutes.

5. While the soup is cooking, prepare the dumpling dough. Sift all dry ingredients together into a bowl, then add milk mixed with cream in equal parts and gently stir. Set aside.

6. Remove the meat from the pot and set aside on a plate. Using two forks, separate the meat from the bones. Shred the meat, then return the chicken to the pot. Pour in the heavy cream and stir until well combined.

7. Using a tablespoon, gradually add the dough to the pot with the soup. Add chopped parsley if using. Cover with a lid and continue cooking over low heat for 15 minutes.
