
Chicken soup with mushrooms
Description
A hearty first course. At first glance, this soup might seem complicated, probably due to the number of ingredients. However, in reality, it's quite simple and quick to prepare (especially if you already have ready-made chicken broth). Anyway, just take a look.

In a saucepan, heat 1 tablespoon of olive oil. Cut the chicken into medium-sized pieces, season with salt and pepper. Place in the saucepan and fry on all sides until golden brown. Transfer to a plate for now.

In the same pot, melt the butter. Add the pressed garlic, thinly sliced mushrooms, and diced onion, carrot, and celery.

Sauté over medium heat until soft, stirring constantly. This will take about four minutes. Then add thyme, mix well, and cook everything together for another minute.

Add the flour and sauté, stirring, until the flour turns golden. Pour in the chicken broth, add the bay leaf and chicken. Cook everything together, stirring, for about five more minutes.

Then pour in the cream and heat everything together for another one to two minutes. Season with salt and pepper to taste. If the soup seems too thick to you, add more cream.

Serve, garnished with rosemary and parsley.
