
Chicken soup with homemade noodles
Description
A hearty first course. To prepare the noodles, you will need chicken eggs, salt, and flour. For the chicken soup, I used chicken drumsticks, but you can cook the soup using any part of the chicken. Serve with fresh herbs and sour cream.

First, you need to prepare the noodles for the soup. For this, you'll need eggs, salt, and flour. It's difficult to specify the exact amount of flour, as it depends on the flour's quality, moisture, grade, etc.

Take a deep, convenient container. Crack the eggs into it. Add salt.

Whisk thoroughly with a whisk until the yolks are well combined with the whites and salt.

Add the flour in parts and start kneading the dough.

When the dough becomes very stiff, transfer it to a floured surface and continue kneading.

You should get a firm, elastic ball like this.

Cut off a small piece of dough and sprinkle the table with flour. Roll out the dough as thinly as possible, until it becomes translucent. Line the noodle drying surface with natural cotton cloth. Leave the circles to dry.

Roll the dough into a roll and cut it into desired noodle pieces with a sharp knife. The soup noodles are ready. Using 4 eggs yields a fairly large amount of dough, enough for 3 soups. Spread the cut noodles on a cloth to dry completely. Then store them in a bag or container.

Proceed to cooking the soup. Wash the meat thoroughly, peel the vegetables, and prepare the spices for the broth.

Place the meat, salt, and spices in cold water. Bring to a boil and simmer for 30 minutes.

Prepare the vegetables for boiling: chop finely.

Add the vegetables to the meat after 30 minutes of cooking and simmer together for another 15 minutes.

Take out the meat and separate it from the bones. This can easily be done using two forks. Tear the meat into pieces. Return it to the broth.
