
Chicken salad with apples

For this chicken salad with apples, it's best to use chicken fillet, as it is more tender. Choose sweet-sour apples and hard cheese—Parmesan is preferable, though Dutch or Russian cheese will also work. It's better to pre-toast the almonds, as raw ones are too hard. Recipe: 1. Boil the chicken fillet and eggs. 2. Slice the onion into half-rings and scald with boiling water. 3. Soak the prunes in boiling water, then cut into medium-sized pieces. 4. Chop the cooked chicken fillet in a blender (try not to turn it into a puree). 5. Peel and core the apples, then grate them on a coarse grater. Grate the boiled eggs as well. 6. Chop the nuts (either in a blender or by hand). 7. Mix all ingredients thoroughly in a bowl, season with salt and pepper, then add mayonnaise. For those who don't like mayonnaise, olive oil can be used as dressing. Let the salad chill in the refrigerator for about 10 minutes before serving. Garnish with herbs, halved prunes, or nuts. Serve chilled.
