
Chicken salad with grapefruit

Cut the chicken breast in half lengthwise. Then place it in boiling water and cook for 7 minutes. Once cooked, let it cool slightly, then cut into large cubes.

Now let's work with the grapefruit. Peel off the skin and separate into segments. Be sure to remove the membranes, as they are bitter.

Remove the seeds from the pepper and chop it finely. Peel the ginger and slice it thinly into matchsticks.

Wash and dry the mint and cilantro. Separate the leaves from the stems. Wash the lime, grate or cut off its zest, cut the fruit in half, and squeeze juice from one half.

Place the chicken cubes into a salad bowl. Add pepper, sunflower oil, soy sauce, grapefruit (including any juice that has been released), ginger, and lime (juice and zest). Mix everything thoroughly.
