
Chicken broth with crouton dumplings
Description
The recipe won't take much time. I want to tell you about a very interesting method. Serve the soup hot.

1. First, wash the chicken and place it in a pot with boiling water. After it comes to a boil again, add herbs, vegetables, or roots to make the broth more aromatic. Simmer over low heat, skimming off the foam as needed, until the chicken is tender.

2. To make the dumplings, crush the dried bread into crumbs (not into flour!). Place in a deep bowl, add the eggs and mix thoroughly. Melt the butter, let it cool slightly, then pour it in as well. Gradually add broth in small portions to form a smooth mixture. Season with salt and pepper, and add chopped herbs to taste.

3. Shape the prepared "filling" into dumplings. Form them with wet hands and place into boiling broth, previously strained. Let the chicken cool slightly, then shred it, separating the meat. Return the meat to the broth.

4. As soon as the dumplings float to the surface, add fresh herbs to the broth and remove from heat. Let it sit, covered, for another 10-15 minutes to infuse. That's it—the broth with unusual dumplings is ready to be served.
