French-style chicken broth

Description

The soup is simple and quick to prepare. Even when making something as basic as chicken broth, there are certain nuances. The traditional cooking method is acceptable, but it doesn't yield the best possible result. However, French-style chicken broth is truly delicious, culinary-wise correct, and practically the perfect chicken broth. As they say, just like in the finest homes of Paris and London :) The soup is ready to serve.

    Wash the chicken pieces thoroughly, then let them dry.

    We clean the vegetables and chop them coarsely.

    Place the vegetables and chicken on a lightly oiled baking sheet. Put in an oven preheated to 180°C and bake for about 35-40 minutes.

    Meanwhile, prepare a bouquet garni by tying together parsley and thyme.

    After baking the chicken, fat will remain in the bottom of the baking tray. Do not remove it under any circumstances. Instead, pour a glass of water into the tray, then pour the water together with the fat into a pot.

    Into the same pot with the fat, pour 4 liters of water, add the chicken, vegetables, and herbs.

    Cover with a lid, place over low heat, and simmer for 4 hours.

    Remove the chicken from the broth; it can be used to prepare other dishes or eaten as is.

    We strain the broth, and discard the vegetables and herbs.

    Place the pot with broth in the refrigerator overnight. During the night, the broth will become thicker (a sign of good broth), and a layer of fat will rise to the surface.

    Carefully remove the fat. And that's it—the French-style chicken broth is ready.
