
Millet kulesh
Description
A hearty and aromatic soup. This soup can be prepared not only at home but also over an open fire in a cauldron. You can make a vegetarian version without meat, using only vegetables. The soup is very similar to porridge, so don't be alarmed if you end up with a thick, sticky consistency. Authentic kulesh is made with fried bacon or pork fat. Serve in bowls and enjoy.

Rinse the grain thoroughly and place it in a saucepan, pour in water, and put it on the stove. Bring the mixture to a boil.

Peel the potatoes and cut them into small pieces. As soon as the water boils, immediately add the potatoes to the pot, reduce the heat, and simmer.

Finely chop the fat and ham. Fry them in a hot skillet, then add chopped onion.

When the millet is already cooked, transfer the contents of the skillet to a pot, mix and season with salt.

Cover the pot with a lid and let it steep for 15 minutes. Serve the hot dish garnished with green onions.
