Description

A hearty first course dish. It is not exactly known whether kulesh is a Belarusian or Ukrainian dish. Likewise, the original recipe for this dish has not been preserved, so it is prepared differently everywhere. In any case, kulesh is a soup or porridge that always includes millet. I don't know how tasty the original kulesh is, but the one prepared according to this recipe truly deserves attention and compliments :) I highly recommend it. Ladle into bowls and serve.

    We start by cutting the pork into small cubes, placing it in 1.5 liters of water, and simmering for about 20 minutes to make broth, skimming off the foam.

    Meanwhile, thoroughly rinse the millet to keep the soup from being "cloudy" :)

    Finely chop the onion.

    Fry the onion in pieces of pork fat until golden brown.

    When the meat in the broth is half-cooked, add the rinsed millet to the pot. Cook for another 20 minutes, then add the fried onion and salt. Cook for 10 more minutes—and the kulesh is ready!
