
Crispy soup

A hearty first course. Preparing curly soup is quite simple—you can use chicken broth, any other broth, or even just plain water as a base. Prepare all the ingredients.

Rinse the chicken, pat dry, place in a pot, and cover with water. Add salt to taste; you can also add black peppercorns and bay leaf if desired. Bring to a boil, skim off the foam, then simmer over low heat for about 30 minutes (until the meat is cooked through).

Meanwhile, sauté the diced onion and carrot until soft. Add the spices during cooking so they release their aroma better.

Peel the potatoes and cut them into cubes.

Strain the prepared broth and return it to the saucepan, add the potatoes and cook for about 15 minutes (until the potatoes are partially cooked).

Then add the noodles (I used egg noodles with natural colorants: beet and spinach). At the same time, transfer the contents of the skillet into the pot. Cook for 5–10 minutes, or until the noodles are done (refer to the package instructions).

Beat the egg with a pinch of salt.

As soon as the soup is ready, slowly pour the beaten egg into the boiling soup in a thin stream, stirring it simultaneously with a fork. The egg will separate into thin threads and make the soup curly.
