
Chanterelle cream soup

Prepare all the ingredients.

Wash the potatoes, peel them, and slice thinly. Cut the onion into half-rings, and peel and finely chop the garlic.

Thoroughly rinse the chanterelles and dry them with paper towels. Large mushrooms can be cut in half, while small ones can be left whole.

Pour vegetable oil into a frying pan or saucepan with a thick bottom. Fry the potatoes over medium heat for a couple of minutes.

Then add the onion and fry for another 3 minutes.

Then add the chanterelles, dried Italian herbs, and garlic. Sauté for another 5–7 minutes, until excess liquid evaporates from the chanterelles.

Transfer the potatoes with chanterelles to a pot or saucepan.

Pour in the water and bring to a boil. Add salt and pepper. Cook over medium heat until the potatoes are tender, about 8-10 minutes.

Blend with a blender until smooth.
