
Fennel Cream Soup
Description
Perfect for lunch. This soup can be made with any broth—chicken, mushroom, meat, or simply vegetable broth. Fennel gives the soup a distinct, vibrant flavor. In addition to fennel, you can use your favorite vegetables. For extra heat, add chili and spices. Serve the soup with croutons, fresh herbs, and sour cream.

Prepare the ingredients. Use vegetables of medium size.

Rinse the fennel and dry it. Then cut the fennel into random pieces.

Peel the onion, carrots, and potatoes. Rinse the vegetables and dry them. Then cut the vegetables into pieces of arbitrary size.

In a skillet, heat the olive oil, then add fennel, onion, carrots, and potatoes. Sauté the vegetables for 3-4 minutes.

In a saucepan, heat the broth—I used meat broth. Add the vegetables to the broth and place over heat, cook for 20 minutes. Add salt and pepper to taste.

After some time, remove the pot from the heat.

Using an immersion blender, blend everything until smooth. Add a little of your favorite spices to the soup, if desired. Serve the soup by ladling it into bowls and bringing it to the table.
