Dice the onion and garlic.

Separate the cabbage into florets.

Place the cabbage in boiling water and cook for 7-8 minutes. Add a pinch of salt.

In a saucepan, heat the butter and sauté the onion and garlic.

Then add bay leaf, 1 large potato, and 3-4 tablespoons of the water used to boil the cabbage to the onion and garlic—cook for 10 minutes.

Add the cooked cauliflower to the vegetables and simmer until the potatoes are done.

Chop the cilantro finely and grate the cheese.

Remove the bay leaf and blend everything in a blender until creamy.

Transfer the mixture to a saucepan, add mustard and sour cream.
