
Broccoli and Spinach Cream Soup

Rinse and break the broccoli into florets.

On a skillet, sauté the onion and celery until translucent. When the vegetables are ready, transfer them to a pot.

Add broccoli and grated potato to the onion and celery. Fry the vegetables, stirring constantly.

When the vegetables are halfway cooked and become tender, add the lemon sliced into rings with the peel, along with salt and pepper. Pour in the broth, cover the soup with a lid, and continue cooking until the potatoes are soft. Then turn off the heat, stir in the finely chopped spinach, and let the soup rest for 1–2 minutes.

Place the cooked vegetables with broth into a blender and blend until smooth. If the soup seems too thick, add more broth or warm boiled water.
