
Broccoli cream soup without cream
Description
A hearty first course. 1. Pour a little vegetable oil into the bottom of a saucepan or skillet and place over heat. 2. Peel and finely dice an onion. Add it to the pan and sauté for a couple of minutes until translucent. 3. Peel and press garlic. Add it to the onion and cook for another 3–4 minutes. 4. Wash, dry, and separate broccoli into florets. Add to the pan. 5. Pour in water or vegetable broth. If desired, you can use meat broth in this recipe for cream of broccoli soup without cream. 6. Bring to a boil and season with salt to taste. 7. Wash, dry, and chop spinach. This is an optional ingredient, but it will make your homemade cream of broccoli soup without cream quite delicious. 8. Add spinach to the pan and cook for another 7 minutes, until broccoli is tender. 9. Strain the broth, then blend the vegetables with a blender, gradually adding the broth back in. 10. Squeeze juice from half a lemon and add it to the soup for a tangy flavor. You can also add chili flakes, for example. Here’s an interesting variation—serve hot in bowls and enjoy.
