
Cream of white mushroom soup
Description
The soup is simple and quick to prepare. I think everyone going into the forest dreams of finding the true king of mushrooms—the porcini. And if you've managed to find some, I recommend rewarding yourself with this magnificent soup. I should warn you, though, that this recipe isn't the easiest, but the result exceeds all expectations. The classic recipe for porcini cream soup comes to us from Europe, specifically from Sweden. Yes, Sweden—those folks are real mushroom lovers. First, you need to soak the white mushrooms in boiling water for about an hour. Drain them in a colander, and do not discard the soaking liquid—it will be useful later.

Onion, our white mushrooms and champignons - slice.

Fry all of this in a pan previously greased with butter.

In another skillet, sauté the flour with the hot mushroom broth; the skillet should also be greased beforehand. And of course, don't forget to strain the sauce.

Now pour chicken broth, the fried mixture, the remaining mushroom broth, and the sauce into the pot. Add nutmeg, garlic, salt, and pepper. Simmer everything for about 15 minutes. After that, remove the garlic from the soup.

Now use a blender to turn everything into a creamy mixture. Carefully pour in the cream, mix well, and place back on the stove to heat gently—do not bring to a boil! Pour into bowls and garnish with herbs and fried mushrooms, as shown in the picture. Enjoy your meal!
