
Crab soup
Description
Hearty first course. If you're interested, serve with herbs and sour cream.

Prepare all ingredients in advance. Thaw the peas. If you have fresh ones, it's better to use them. Instead of corn kernels, you can use small cobs. Also, use string beans if you have them on hand.

Chop the vegetables finely. It is preferable to sauté the onion, carrots, and celery separately in advance in a frying pan with butter. Place all the vegetables into a saucepan, pour in the broth, and bring to a boil. Cover with a lid and simmer over low heat for fifteen minutes.

The crab should be boiled separately if it is fresh. Place it whole into boiling water, cook for about twenty minutes, then cool and remove the meat from the shell. Add it to the soup with the other ingredients.

If you are using canned crab meat, pour the contents of the can directly into the pot. Bring the soup to a boil, season with salt and pepper, and add spices. At the very end, add chopped parsley. Remove the soup from the heat and let it steep for half an hour.
