Peel the onion and finely chop it, then place it in a deep bowl. Add salt, sugar, lemon juice or vinegar to the onion, and pour hot water over it. Let it sit for about 15 minutes.

Grate the cheese. To prevent it from sticking to the grater, freeze it first.
