Description

Perfect for lunch. A hearty and incredibly delicious dish with several variations. It's best to use fresh meat, such as lamb or beef. The broth must be cooked with bones. There are quite elaborate recipes, and there are simpler ones, but they all share common features. Today, we'll take the easy route and prepare kololik with raw minced meat and rice, using butter for the filling. The result is a truly luxurious dish with a rich flavor that everyone will love. Highly recommended! Serve the soup hot.

    Prepare all the ingredients from the list. Rinse the meat and dry it. Cut the meat off the bone, then pass it through a meat grinder using a coarse blade. Keep the bones for broth. You can use spices to your taste.

    Transfer the bones to a pot and cover with water. Peel the carrots and cut them into several pieces. Remove the outer skin from the onion and rinse it thoroughly. Add the prepared vegetables, peppercorns, and parsley to the pot. It's better to tie the parsley into a bundle so it's easier to remove from the broth later. Place the pot on the stove and bring to a boil. Skim off the foam and simmer over the lowest heat for about 2 hours.

    While the broth is simmering, you can prepare the meatball filling. Rinse the rice and cook it in salted water until almost done. Transfer the rice to a deep bowl, add the ground meat, grated or minced onion, egg, salt, and spices to taste. Mix thoroughly and set aside in the refrigerator for now.

    15-20 minutes before the broth is done cooking, you can add salt. When the broth is ready, remove the vegetables and bones, and strain the broth.

    Peel the potatoes and cut them into large cubes. Transfer to a saucepan, adding tomato paste.
